SH1106 OLED not working

Hello, I purchased an AirGradient device and have been using it to monitor air quality. It has a SH1106 OLED display and a SHT31 temperature sensor connected to the I2C bus. The display was working using the firmware that came on the ESP8266 from AirGradient. I can see that Tasmota is picking up the temperature from the SHT31 sensor.

I flashed it with Tasmota "Platinum" from here: https://jason2866.github.io/Tasmota-specials/ Which includes Sensors and Display.

When Tasmota boots up, I can see it's detecting the SH1106 display:

I was following the guide here: https://templates.blakadder.com/air-gradient-pro.html

I've tried just using the basic Tasmota display commands from here: https://tasmota.github.io/docs/Displays/#supported-displays

But the screen stays off.

What other troubleshooting steps can I do?

When running I2C Scan I noticed the display wasn't showing up in it:

I tried:

DisplayAddress 0x3c

And noticed that the screen briefly flashed. Good news!

I tried reconfiguring it with the previous commands and can now see things showing up.
