Get Ethermint Solidity tests running w/ Ephemeral Cluster

We should get all of Ethermint's solidity tests to run against Cevmos using the ephemeral cluster.

We need to create a setup script similar to the one Ethermint uses but that works with evmos in docker.

These tests currently use Truffle. We should consider a follow up issue to not use Truffle, my preference would be to use Foundry but Hardhat would also be fine.

All the tests are using Solidity v0.4.24 when we're at v0.8.12. Gonna bump the versions and fix them.
