As an engineer on another cosmos-based blockchain, I would like a guide on how to add EVM support to my own chain, so that I don't have to guess on how it's supposed to be set up.

That guide only says how to create a new chain. It doesn't say anything about how to add evm support to an existing chain.

my advice is: don't. This has been done and it was hellishly terrible experience for pretty much everyone, including the users and engineers.

What was so hellishly terrible about it?

There are always going to be some pretty huge decisions to make which only have terrible options, for example what do you do with existing keys that can't sign evm transactions? Force everyone to create new ones? Merge theirs into a new account? (can the old key still sign then? can users choose not to do this at all?)
There are tons more but ultimately this is one of the reasons the idea was scrapped for gaia.
