Remove Headers and Modules from SentryCocoaFramework before packing

Workaround for #4292:

• Maui iOS build error(s): The xcframework sentry.bindings.cocoa\5.10.0\lib\net8.0-ios17.0\Sentry.Bindings.Cocoa.resources.zip has an incorrect or unknown format and cannot be processed. #4292 (comment)

Warning

We should publish a pre-release from this branch and validate this resolves the problem before merging into main... this is quite a major change.
