logger: escape non-printable chars strace-style; fix gofmt lint error

Silently stripping non-printable control characters from stdout log output loses payload information. This replaces the strip approach with strace-style encoding so bytes remain visible while the terminal stays safe.

Changes

• escapeCtrlChars replaces stripCtrlChars — instead of deleting control characters, encodes them as escape sequences:

  • Named escapes for common controls: \a \b \f \r \v
  • Hex escapes (\xHH) for all other non-printable bytes (0x00–0x1F, DEL 0x7F)
  • Actual \n and \t are preserved for readability
  • All printable ASCII and multibyte Unicode pass through unchanged

• interface{} → any — .golangci.yml enforces a gofmt rewrite rule requiring any; the anonymous formatter function signature is updated accordingly
