Normalize remaining curly quotes and apostrophes to straight ASCII characters in prose, extending the convention established in #161 across the rest of the docs.

A repo-wide style scan showed straight quotes/apostrophes dominate (~1,700 straight vs. 2 curly double quotes; ~377 straight vs. 28 curly apostrophes in prose). The remaining curly characters were stylistic deviations rather than intentional. Heading capitalization (predominantly Title Case) and UI verbs ("click" for UI, "press" for keys, "select" for selections) were already consistent and left unchanged.
