This PR removes detailed Grafana setup and usage documentation from the repository's docs/grafana.md file and replaces it with links to the external documentation website at docs.k0rdent.io.
Changes:
- Removed 171 lines of detailed instructions for using KOF data without Grafana (metrics, logs, traces) and for manually installing/enabling Grafana
- Added two external documentation links to replace the removed content
