chore: Update PHPUnit workflow for sqlite and remove unneeded

• Resolves Unit tests don't execute against php 8.2 #473

This app does neither provide database tests nor have integration tests.
So there is no database flavor specific stuff, so no need to test all of that databases.

Instead test all supported PHP versions properly.
