Bump package version to 1.0.5

Motivation

• Release bump to set the project and runtime package version to 1.0.5.

Description

• Updated version in pyproject.toml and __version__ in src/gabriel/_version.py from 1.0.4 to 1.0.5.

Testing

• Verified file changes and contents with rg -n "1\.0\.5|1\.0\.4" pyproject.toml src/gabriel/_version.py, inspected the diff with git diff -- pyproject.toml src/gabriel/_version.py, and committed the change with git commit -m "Bump package version to 1.0.5", all of which succeeded.
